or 800g strong white bread flour or Tipo “00” flour, plus 200g finely ground semolina flour
* 1 level tablespoon fine sea salt
* 2 x 7g sachets of dried yeast
* 1 tablespoon golden caster sugar
* 4 tablespoons extra virgin olive oil
* 650ml lukewarm water

This gourmet homemade pizza base is very easy to prepare yet very delicious.The key to creating the finest homemade pizza base is using real durum semolina flour which is why it is highly recommended to get the Tipo “00” flour. Prepare a clean work surface where you can sieve the flour and salt. Make a well in the middle of the flour. In a bowl, combine the yeast, sugar and olive oil into the water and let stand for a few minutes. Pour into the well. A fork can be used to swirl the flour into the sides until it all comes together. Afterwards, knead using clean, flour dusted hands until you end up with a smooth, springy dough. Place the dough in a mixing bowl and cover with a damp piece of cloth in a warm room. Leave for an hour until it has doubled its size. Knead the flour a little so you can push out the air from the dough.

The homemade pizza base is good for cooking; however, you can still keep the unused portion in the refrigerator for a couple of days. If you would store it, then keep it in a zip lock bag in the freezer which must be used within three months.
