Fat Free vegan chocolate cupcakes for vegetarians

INGREDIENTS:
* 1 cup flour
* 1/4 cup cocoa powder
* 3 tablespoons black cocoa powder
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda * 1/4 teaspoon salt
* 1 cup soymilk
* 1/4 cup canola oil or applesauce ( as for applesauce, increase to 1/2 cup)
* 1/2 cup maple syrup
* 1/4 cup sugar
* 1 teaspoon apple cider vinegar
* 1 teaspoon vanilla extract

PROCEDURE
1. Preaheat the oven to 350 and place cupcake liners on a 12-muffin pan

2. Mix the following: flour, cocoa powders, baking powder, baking soda and salt.

3. In another container, combine the soy milk, oil, maple syrup, sugar, vinegar and vanilla.

4. The wet ingredients must be beaten at medium speed which will take about two minues. Pour the dry ingredients to the mixture and beat for about another minute to combine well.

5. Fill each cupcake liner about 2/3 full and bake for about 25-30 minutes. Remove from oven and let it fully cool.

Delicious Mint Icing for a twist

1.Cream the shortening for a few minutes until soft.

2.Add one cup powdered sugar and a few splashes of the soymilk (or soycreamer). Mix fully and continue to alternate until all the powdered sugar is dissolved and the frosting is at the desired consistency. Add the vanilla, mint, and green food coloring.

Now, you have created your own vegan chocolate cupcakes that does not only look enticing but tastes yummy as well.
