8 tablespoons (1 stick) unsalted butter, cut into 4 pieces
2 ounces bittersweet chocolate, chopped
1 cup dutch-processed cocoa powder
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs
1 cup (5.25 ounces) granulated sugar
1 teaspoon vanilla extract teaspoon table salt
1 1 cup (4 ounces) sour cream

Instructions: Preheat oven to 350 degrees , place oven rack to lower-middle position . Use cupcake liners on the mini-muffin pan .Combine butter, chocolate,cocoa in medium heatproof bowl. Set bowl over saucepan of medium heat water; apply heat until butter and chocolate have dissolved. Whisk until smoothly combined. Allow to cool but it must still remain warm. Whisk flour, baking soda baking powder in mixing bowl and combine. Whisk eggs in second medium bowl to combine. Fully combine sugar, vanilla,salt and mix well. Add cooled chocolate mixture until everything has been fully mixed. Sift about 1/3 of flour mixture over chocolate mixture blending thoroughly, then whisk in sour cream. Sift in remaining flour mixture. Whisk until batter has homogeneous consistency. Equally divide the batter among muffin cups. Bake until toothpick inserted into center of cupcakes comes out clean, about 12-14 minutes. Allow the cupcakes to cool in muffin pan on wire rack until cool enough to handle, about 10 minutes, then transfer each cupcake to cooling rack. Cool to room temperature before icing.
